* Exported from MasterCook * Marvelous Rice and Vegetable Salad Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Rice Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups rice, cooked -- cooled 1 red pepper -- julienned 1 green pepper -- julienned 1 medium red onion -- diced 6 scallions -- sliced 1 cup dried currants 2 shallots, peeled -- diced 10 oz. pkg. frozen peas -- thawed 1/2 cup black olives -- chopped 1/4 cup Italian parsley -- chopped 1/2 cup dill -- chopped salt, pepper -- to taste --VINAIGRETTE-- 2 tablespoons Dijon mustard 8 tablespoons red wine vinegar 2 teaspoons sugar 1 teaspoon salt 1 teaspoon pepper parsley or chives -- minced 1 cup oil Place all vinaigrette ingredients in a blender, except oil. Drizzle oil in while blender is running. (Makes 2 cups) Combine remaining ingredients in a mixing bowl. Pour 1-1/2 cups of vinaigrette over top. Toss; cover and refrigerate up to 4 hours.
