* Exported from MasterCook * Malaysian Peanut Dressing Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Dressings Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large Clove -- garlic 1 slice Ginger root -- peeled 1/4"thick 1 Fresh Thai or other small Hot chili -- seeded optional 1 tablespoon Oil 1/2 cup Peanut butter 1 cup Hot water 1/4 teaspoon Tumeric 1 teaspoon Brown sugar 1/2 teaspoon To 1 ts anchovy paste -- option 2 teaspoons Lime juice;fresh -- strained Asian hot sauce or cayenne To taste Salt to taste Grind garlic in food processor along with ginger root and chili,or finely mince with knife. Heat oil in medium saucepan over low heat.Add garlic mixture and saute,stirring,2 minutes. Add peanut butter,hot water,turmeric,brown sugar, and anchovy paste and mix well .Cook over low heat,stirring often,until smooth,2 minutes.Remove from heat and stir in lime juice.Season to taste with hot sauce and salt.Transfer to bowl and cool .Taste and adjust seasoning,if cooled dressing is to thick to pour,gradually stir in addtional 1 or 2 tablespoons water.Makes about 1 1/4 cups... - - - - - - - - - - - - - - - - - -
