* Exported from MasterCook * Safe Caesar Dressing Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Dressings Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup Extra virgin olive oil -- divided use 20 milliliters Garlic -- pressed or finely chopped (2 tsp.) 1/4 cup Freshly squeezed lemon juice 2 tablespoons Worcestershire sauce 2 tablespoons Red wine vinegar 1 tablespoon Anchovy paste 1/2 teaspoon Freshly ground black pepper 1 Egg -- lightly beaten 1/2 cup Fresh grated Parmesan cheese Pour 2 tbsp. of olive oil in a heavy saucepan. Add garlic and heat until garlic starts to sizzle. Remove from heat. Do not brown . Remove garlic mixture from pan and add it to the remaining oil; set aside. In same pan, combine lemon juice, Worcestershire sauce, vinegar, anchovy paste, pepper and egg. Mix thoroughly using a wire whisk . Bring to simmer over low heat. Simmer for 4 minutes, stirring frequently with whisk. Remove from heat; cool slightly. Pour cooled, coked mixture into blender and blend on low speed. Slowly pour in all the garlic oil, blending thoroughly. Add Parmesan cheese and blend into dressing, just until well mixed. Store, covered, in refrigerator. - - - - - - - - - - - - - - - - - -
