* Exported from MasterCook * Avocado Hollandaise-Seafood Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salads Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----AVOCADO HOLLANDAISE DRESSING----- 2 Eggs 1/4 cup Lemon juice 1/2 cup Butter or margarine -- melted 1 Avocado -- peeled, seeded and c 1 teaspoon Salt 1 dash Red pepper Onion salt -----FOR SALAD----- Lettuce leaves 10 ounces Asparagus spears -- cooked 1 pound Large shrimp -- cooked, peeled & dev 1/2 pound Scallops or cubed white fish -- cooked in butter 2 Hard-cooked eggs -- sliced 1/3 cup Pitted black olives Blend eggs with lemon juice in blender until lemon colored. Slowly add bubbly hot butter at low speed. Add avocado and blend into butter mixture until smooth. Add salt, red pepper and season to taste with onion salt. Chill at least 30 minutes. To make salad, arrange lettuce leaves on large platter. Top with asparagus, shrimp, scallops and eggs arranged as desired. Garnish with olives. Serve with dressing. - - - - - - - - - - - - - - - - - -
