* Exported from MasterCook * Grilled Shrimp Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Seafood Barbecue Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- VINAIGRETTE DRESSING 1/4 cup Vegetable oil 2 tablespoons Extra-virgin olive oil 2 tablespoons Cider vinegar 1 tablespoon Minced shallot or white -- part of scallion 1 teaspoon Dijon mustard 1/4 teaspoon Each salt and granulated -- sugar 1 pound Medium-size shrimp (ab 32) -- peeled and deveined 1 tablespoon Chili powder 6 cups Mixed salad greens (we -- used romaine, waterc radicchio and arugula) 2 Navel oranges; peeled -- white pith removed -- sectioned and cut in small pieces Shake all vinaigrette ingredients in a small jar with tight-fitting lid. Pour about 3 tablespoons into a small bowl. Have 4 long skewers ready. Thread about 8 shrimp per skewer. Brush with the 3 tbsp. vinaigrette (discard any remaining in bowl) , then sprinkle with the chili powder. Grill or broil shrimp 4 inches from heat source 3 minutes per side, or until just barely opaque. Toss remaining vinaigrette with greens and arrange on a large platter. Sprinkle with orange pieces and top with grilled shrimp, removed from skewers. Serves 4. Easy, delicious and pretty. - - - - - - - - - - - - - - - - - -
