* Exported from MasterCook * Shrimp Salad Orleans Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Salads Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 pounds Shrimp w/shells 3/4 cup Md sherry 2 Cl garlic -- mince 1/2 cup Green onions -- chop 2 tablespoons Olive oil 1 tablespoon Lemon juice 3/4 cup Chicken stock 1 dash Cayenne 3/4 cup Water Combine wine, oil, stock and water with garlic, onions and lemon juice. Add salt and cayenne to taste. Bring to full boil in large saucepan. Add shrimp and return to boil. Remove from heat. Cover saucepan and allow to stand and cool for 20 minutes. Remove shrimp and refrigerate shrimp for 1 hour or longer. Remove heads, devein and arrange cold shrimp on lettuce. Serve with mayonnaise and lemon. - - - - - - - - - - - - - - - - - -
