* Exported from MasterCook * Carrot and Raisin Slaw Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 c Shredded carrots 1 1/2 c Shredded white cabbage 1 c Golden raisins 1 Granny Smith apple 1 tb Fresh lemon juice 2 ts Honey 1 tb Fine-shred unsweet coconut 1 c Plain yogurt OR 1/2 c Plain yogurt AND 1/2 c Sour cream 1/4 c Chopped walnuts (opt) Peel, core and grate the apple. Combine with the carrots, cabbage, and raisins. In a separate bowl, whisk together the lemon juice, honey, coconut, and yogurt or yogurt-sour cream mixture. Combine the cabbage mixture and the dressing, and toss thoroughly. Add the walnuts, if desired, and stir until they're well distributed.
