* Exported from MasterCook * Blueberry-Spinach Salad Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Spinach or Bibb lettuce torn -- into bite-size piece 1 1/2 cups Fresh or frozen blueberries -- thawed 4 ounces Blue cheese -- crumbled 2/3 cup Toasted pecans or walnuts* -----FOR DRESSING----- 1/2 cup Olive or canola oil 3 tablespoons Blueberry, white wine -- or raspberry vinegar 1 teaspoon Dijon mustard 1 teaspoon Sugar Salt to taste Combine torn dried greens, blueberries, blue cheese and nuts in a salad bowl. Combine dressing ingredients and refrigerate. Just before serving toss greens gently with dressing. * To toast nuts put them on a jelly roll pan and toast in a 300 degree oven for 5 to 10 minutes.
