                          Classic Spinach Salad

   4      slices        turkey bacon
   6      cups          spinach leaves -- loosely packed
   1 1/2  cups          fresh mushrooms -- sliced
     1/2  cup           purple onions -- thinly sliced
                         -- separated into rings
                        ------dressing------
     1/4  cup           red wine vinegar
   1      tablespoon    sugar
     1/2  teaspoon      dry mustard
     1/8  teaspoon      fresh ground pepper
   2      tablespoons   lemon juice
   2      teaspoons     vegetable oil

     Cook turkey bacon according to package directions, omitting fat; crumble and set aside.    
  Remove large stems from spinach; tear spinach into bite-size pieces,and place in a bowl. 
 Add bacon, mushrooms,
and onion; Toss well, and set aside.  Combine vinegar and next 5 ingredients in a jar. 
 Cover tightly, and shake vigorously.  Pour over salad; toss well.
