                          Italian Spinach Salad

   1      small         Bunch, fresh spinach -- washed
     1/2  small         Red onion -- sliced
   1                    Carrot -- grated
   2                    Hard-cooked eggs grated or
     1/2  cup           Pine nuts
                        Vinegrette dressing (your
   1                    To 2 T capers (optional)
                        Salt to taste
                        Freshly ground pepper

Combine spinach, onion, carrots and eggs in salad bowl. 
Toss with pine nuts and enough vinegrette dressing to moisten slightly. 
Add capers and salt and pepper to taste.
