* Exported from MasterCook * Spinach Salad Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Outdoor Salads Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Fresh young spinach leaves 1/4 pound Small mushrooms 6 slices Bacon 1/3 cup Olive oil 2 tablespoons Lemon juice 1/2 teaspoon Dry mustard Salt Fresh ground pepper 6 Antichoke hearts -- quartered Wash, drain and dry the spinach well. Tear leaves into bite size pieces . Place in a bowl. Clean mushrooms, slice and add to spinach. Fry bacon until crisp. Drain on paper towels, then crumble. Place half the bacon in the salad bowl. Reserve the rest. In a separate small bowl, mix oil, lemon juice, mustard, salt and pepper. Blend and pour over salad. Toss well. Garnish salad with artichoke hearts and remaining crumbled bacon.
