* Exported from MasterCook * Tuna-Bean Salad Recipe By : Pasta, Rice & Beans Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- Basil Dressing -- (see recipe) 3 medium green bell peppers 2 15oz. cans cannellini or great northern beans and drained 2 6-1/8oz.can tuna in water -- drained 1/3 cup ripe olives -- sliced 1 bunch leaf lettuce 2 medium tomatoes -- cut into 12 wedges Prepare Basil Dressing per recipe. Set oven control to broil . Pace bell peppers on rack in broiler pan. Broil with tops 4-5" from heat about 5 min. on each side or until skin blisters and browns. Wrap in towel; let stand 5 min. Remove skin, stems, seeds and membranes from peppers. Cut peppers into 1/4" slices. Toss peppers, beans, tuna, olives and dressing in glass or plastic bowl. Cover and refrigerate at least 4 hours to blend flavors, stirring occasionally. Spoon salad onto lettuce leaves. Garnish with tomato wedges. - - - - - - - - - - - - - - - - - -
