* Exported from MasterCook * Tomato Salad w/Fresh Herbs and Garlic Crouton Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Salads Breads Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Salted anchovy 1/2 Cl garlic -- peel 1/2 cup Olive oil 2 tablespoons Fresh parsley -- mince 2 tablespoons Fresh chervil -- mince 2 tablespoons Fresh chives -- mince 2 tablespoons Fresh basil -- mince 3 pounds Various types and colors or -- tomatoes; slice 1/2 pint Cherry tomatoes GARLIC CROUTONS 4 slices Sourdough bread 2 tablespoons Olive oil 1 Cl garlic -- peel SALAD-Soak anchovy in water for 30 minutes and rinse well. With a mortar and pestle mash garlic and anchovy until smooth. In a bowl combine well with oil, herbs and salt and pepper to taste. Arrange croutons on salad plates and top with tomato slices. Drizzle with dressing and garnish with cherry tomatoes. CROUTONS-Preheat the broiler. Brush bread with oil on both sides and broil until toasted.
