* Exported from MasterCook * Jamaican Jerk Marinade Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Caribbean Meats Poultry Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 cups Chopped green onions 2 Habaneros -- seeded/chopped 1 tablespoon Soy sauce 1/4 cup Key Lime Juice (bottled) 4 tablespoons Ground allspice 3 teaspoons English dry mustard 2 Bay leaves-crumbled 4 Cloves garlic-chopped 1 tablespoon Salt 1/2 teaspoon White pepper 1/2 teaspoon Black pepper 2 tablespoons Honey 2 tablespoons White vinegar 1/2 teaspoon Nutmeg 2 tablespoons Country Bob's bottled sauce* 1 Ripe Papaya-peel,seed -- chop** * may use any bottled barbeque sauce ** may omit if necessary Combine all ingredients in food processor and process until smooth. Use as a marinade for poultry, pork or beef. Use on meats that are to be grilled for a tasty caribbean treat. Or take a skinned cut-up chicken, marinate in Jerk, place in cooking bag with Jerk sauce and cook in oven for about an hour or until chicken is done.
