* Exported from MasterCook * Mediterranean Marinade Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Mixes Meats Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/3 cup Olive or cooking oil 3 tablespoons Wine vinegar 3 tablespoons Tarragon vinegar 1/4 cup Onion -- finely chopped 2 Garlic cloves -- minced 1 tablespoon Fresh oregano -- snipped or 1 teaspoon Dried oregano -- crushed 1 tablespoon Fresh rosemary -- snipped or 1 teaspoon Dried rosemary -- crushed 1/2 teaspoon Salt Combine oil, wine vinegar, tarragon vinegar, onion, garlic, oregano, rosemary, and salt in a small bowl. Place 3 to 4 lbs. meat into a heavy plastic bag set in a shallow dish. Pour marinade over meat. Seal bag and turn to coat meat well. Marinate in the refrigerator for 6 to 24 hours, turning the bag occasionally. Drain meat, reserving marinate, if desired. Grill meat. If desired, cook meat for half the time specified, brushing meat with marinade. Continue grilling for the remaining time or to desired doneness.
