* Exported from MasterCook * Columbia's Spanish Bean Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegetables Ethnic Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound Dry garbanzo beans 2 ounces Lard 1 tablespoon Salt 1 pound Potatoes -- quartered 1 Beef bone 1 Ham bone Pinch saffron 2 quarts Water Salt to taste 4 ounces White bacon -- (salt pork) Chorizo sausage -- thinly slic Pinch of paprika 1 Onion -- copped Soak the beans overnight with the T. of salt in sufficient water to cover the beans. When ready to cook; drain the salted water from the beans and place them with the beef and ham bones in the 2 qts of water. Bring to a boil, then reduce to a bare simmer and cook 45 min. Chop the white bacon and fry with the paprika and onion in the lard until onions are transparent. Add to the beans along with the potatoes, saffron and additional salt to taste. When the potatoes are soft, about 30 min, remove pot from heat and add the chorizo slices. Serves 4. - - - - - - - - - - - - - - - - - -
