Cover with water 2 inches above beans; let soak overnight. Drain. Combine beans, 1 quart water, consomme, and next 5 ingredients in Dutch oven; bring to a boil. Cover, reduce heat, an simmer 1 hour. Add 1 cup water and next 4 ingredients, cover and simmer 30 minutes or until vegetables are tender. Remove meat from bone, and chop, discarding bone. Remove and discard bay leaves.
