* Exported from MasterCook * Yankee Bean Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound Smoked ham -- cut into 1/2" Cubes 1 1/2 cups Onions -- chopped 1 cup Carrots -- chopped 1/2 cup Celery -- chopped 3 tablespoons Bacon drippings or il 4 cups Chicken broth 2 15.5 oz cans Green Giant Great Northern Beans -- drain 16 ounces Can whole tomatoes -- drained Cut up 1/2 teaspoon Roesemary leaves 1/4 teaspoon Thyme leaves 1 Bay leaf 6 Peppercorns In large saucepan, saute ham, onions, carrots and celery in bacon drippings about 10 minutes or until onions are tender. Stir in chicken broth, beans and tomatoes. Tie rosemary, thyme, bay leaf and peppercorns in cheesecloth bag; add to soup mixture. Bring to a boil. Reduce heat; simmer 30 minutes.
