* Exported from MasterCook * King Edward Hotel's Tomato Bisque Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Bisque Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 cup Diced white onion 1 teaspoon Finely chopped garlic 3 tablespoons Olive oil 1 cup Diced eggplant 1 cup Diced yellow zuchinni 1 cup Diced green zucchini 1 cup Diced sweet peppers (yellow -- red and green) 1 tablespoon Tomato paste 1 1/3 cups Tomato juice 1 1/3 cups Chicken stock 1/2 cup Chopped fresh basil leaves -- salt and pepper 1. Cook onion and garlic in hot oil for 2 minutes. Add eggplant, zucchini and peppers. Cook 5 minutes. 2. Add tomato paste and cook 5 minutes on low heat. Stir in tomato juice and stock.
