* Exported from MasterCook * Baja Corn Chowder Recipe By : Sizzling Mexican Serving Size : 4 Preparation Time :0:00 Categories : Chowder* Corn* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup butter 3 cans whole kernel corn -- drained 1 medium green pepper -- diced 2 cups Chicken broth 1 quart Half and half 7 ounces green chiles -- diced 1 pk Lawry's Spices and Seasonings for Fajitas 2 cups Monterey jack cheese -- shredded 1/2 teaspoon Seasoned pepper 1 dash hot pepper sauce -- to taste In Dutch oven, melt butter. Add one can of corn and bell pepper; saute 5 minutes. Remove from heat. In food processor or blender, place remaining two cans of corn and chicken broth; process until smooth. Add to Dutch oven with half-and-half, chilies and Spices for fajitas. Return to heat. Bring just to a boil, stirring constantly.
