* Exported from MasterCook * Cauliflower Chowder Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegetables Rice Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 Head cauliflower florets 3 tablespoons Butter or margarine 1/2 cup Onion -- mince 1 Cl garlic -- mince 2/3 cup Long-grain or converted rice 1/4 teaspoon White pepper 5 cups Chicken broth 2/3 -1 cup Parmesan -- grate 2 tablespoons Parsley -- mince In a large saucepan melt butter. Saute onion until soft and transparent. Stir in garlic. Saute briefly, being careful not to burn. Stir in rice and coat with butter. Add pepper and broth. Bring to a boil. Lower heat to simmer. Leave uncovered and cook 20 minutes. Add cauliflower. Cover. simmer 5-10 minutes until cauliflower is just tender. Sprinkle with cheese and parsley. Serve hot from the pot.
