* Exported from MasterCook * Dungeness Crab Chowder Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Chowder Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Vegetable oil 1 cup Red bell pepper -- diced 1 cup Green bell pepper -- diced 4 cups Corn kernels -- fresh or froze 1 teaspoon Garlic -- finely chopped 1 teaspoon Fresh thyme 1 tablespoon Ground cumin 1 cup Scallions -- diced 4 cups Chicken stock -- hot 1/4 cup Cornstarch -- * see note Tabasco sauce -- to taste 2 cups Dungeness crab meat -- cooked Salt Fresh ground black pepper Mix the cornstarch with 3 tablespoons cold water. 1-Heat the oil in a 5 quart stockpot over medium heat. Add the peppers and corn and saute for 2 minutes over high heat . 2-Add garlic, thyme and cumin; saute for 2 minutes. Add scallions and saute for another minute . 3-Add hot chicken stock and cornstarch mixture. Reduce the heat to medium and simmer for 2 minutes. 4-Season the chowder with tabasco to taste, then add the cooked crabmeat.
