* Exported from MasterCook * Oyster Chowder Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Chowder* Seafood* Oysters* Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons Butter or margarine 1 Large onion -- chopped 2 Stalks celery -- chopped 2 Potatoes -- (about 1-1/4 pound 2 Medium carrots -- peeled and 1/4 cup Chopped parsley 3 cups Half-and-half 1 can (17 oz) creamed-style corn 1/2 teaspoon Sugar 1/4 teaspoon Freshly ground pepper 1 teaspoon Salt -- or to taste 1 pint Oysters with juice 8 ounces Oyster crackers for serving Melt the butter in a large soup pot. Add the onion and celery and cook, stirring occasionally, until soft. Add the potatoes, carrots, parsley, and 2 cups half-and-half. Simmer, uncovered , for 15 minutes or until the potatoes are tender. Stir in the corn, the remaining 1 cup half-and half, the sugar, pepper, and salt. * The chowder may be refrigerated overnigh t at this point, if desired.
