* Exported from MasterCook * Barkaya Marak (Cream of Spinach Soup) Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons Margarine 2 Onions -- chopped(1 1/2 cups) 1 Clove of garlic -- large 2 cups Water 5 Potatos -- about 1 pound and sliced 1 package Frozen chopped spinach -- (10 oz size) 1/2 teaspoon Dried basil 1 teaspoon Salt 1/2 cup Water -- to rinse blender 1 cup Heavy cream 1/4 cup Water -- to rinse cream cont. 1 cup Sour cream -- for garnish In a large pot, melt the margarine and fry the onions and garlic until the onions are golden. Add the 2 cups of water, potatoes, spinach(which need not be thawed), basil and salt. Simmer for about 20 minutes, or until the potatoes are tender. Puree the mixture in small amounts until it is completely pureed. Rinse the blender with the 1/2 cup of water. Wash the pot and then add the pureed soup and blender water to it. Add the heavy cream, rinse out the cream container with 1/4 cup of water and add that to the soup also. Stir thoroughly to mix in the cream and reheat before serving, if necessary .
