* Exported from MasterCook * Cream of *Mushroom Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 1/2 cups To 2 mushrooms* -- sliced 3 Green onions -- chopped fine about 2" of grren -- opt 12 ounces Can vegetable broth (chicken -- or beef may be subst 1/2 cup Light evap.skim milk or -- skim milk 2 tablespoons Cornstarch mixed with 1/4 cup Lt evap. skim milk or -- skim milk Saute onions in a saucepan sprayed with vegetable spray for 2 min. Add sliced mushrooms and saute for a minute more. Remember to add a little broth if the vegetables begin to stick. Add broth and simmer for 5 minute, then add light evapoarated milk ofr skim milk and bring to a boil. To thicken the soup add cornstarch that has been mixed with 1/4 cup skim milk and simmer a couple minutes more. *Any vegetable may be substituted for the mushrooms, try using steamed broccoli, celery or asparagus for a quick soup. - - - - - - - - - - - - - - - - - -
