* Exported from MasterCook * Cream of Green Bean Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 pound Fresh green beans 3 cups Chicken broth 2 Small potatoes; peeled -- 1/4s 1/2 cup Chopped fresh chives 1/4 cup Butter 2 Small garlic cloves -- crushed 1/2 teaspoon Salt 1/8 teaspoon Pepper 1/4 cup Sour cream 1 tablespoon Lemon juice Wash beans; trim ends and remove strings, if necessary. Cut beans into 2-in. lengths. Combine the beans and next 5 ingredients in a large saucepan; bring to a boil. Cover, reduce heat, and simmer 20 to 25 min. or until vegetables are tender. Stir in salt and pepper. Place about 1/3 of bean mixture in container of an electric blender; process until smooth. Repeat procedure with remaining mixture.
