* Exported from MasterCook * Cream of Jalapeno Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 tablespoons Butter or margarine 1 large Onion -- chopped 1 large Carrot -- finely chopped 1 large Green pepper, seeded -- finely Chopped 3 Jalapeno peppers, seeded Finely chopped 3 tablespoons Flour 3 cups Chicken broth 2 cups Whipping cream 1 cup (4oz) Sargento Fancy Shredded Swiss cheese 1 cup (4oz) Sargento Shredded Cheddar cheese In a large saucepan, melt 2 T butter and cook onion, carrot, and green pepper over low heat, stirring occasionally until tender, about 8 minutes. Sitr in jalapeno peppers. Remove from saucepan. Melt remaining 2 T butter in separate saucepan. Stir in flour and cook stirring constantly, 2 mintues. Gradually stir in broth and cream. Increase heat and bring to a boil, stirring constantly. Reduce heat and simmer until thickened, about 10 minutes. Stir in both cheeses, stir in vegetables - - - - - - - - - - - - - - - - - -
