* Exported from MasterCook * Cream of Leek Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups Sliced leeks -- white part only 3 cups Diced potatoes 3 cups Chicken broth or water 2 cups Half and half 4 tablespoons Butter Salt and pepper to taste Chives or parsley for garnis In a stock pot combine the leeks, potatoes, and chicken broth. Bring to a boil . Reduce the heat and simmer for 20 to 30 minutes, until the leeks are tender. Puree the mixture in a blender or food processor. Return the mxiture to the pot and slowly add the half and half. Heat, but do not boil. Add the butter, salt, and pepper to taste. If the soup appears too thick, add milk.
