* Exported from MasterCook * Cream of Onion Soup 2 Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 Extra large or 4 medium Onions 3 tablespoons Butter 1 tablespoon Flour 1/2 teaspoon Salt 2 cups Chicken broth 1 cup Milk 1/2 cup Cream 3 Egg,yolks -- lightly beaten 1 1/2 teaspoons Paprika Fresh ground pepper to taste 3 Drops hot red pepper sauce 2 tablespoons Parsley -- chopped Peel onion,and slice very thin.In saucepan,melt butter,and add onion.Saute until golden brown,about 10 minutes.Add flour and salt.Gradually add chicken broth,stirring constantly .Cover and simmer,over low heat,for about 10 minutes,until onions are very tender.Add milk and cream.Take a little of the hot soup,and add,stirring,to the beaten egg yolks;then add egg yolk mixture to soup in pan.Continue heating over low heat,until fully hot,but do not boil.Add paprika,pepper and red hot pepper sauce.Serve hot,garnish with fresh,chopped parsley .Makes 4 appetizer servings....... - - - - - - - - - - - - - - - - - -
