* Exported from MasterCook * Cream of Potato-Bacon Soup Recipe By : Serving Size : 5 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 6 cups HAM STOCK 3 pounds Potatoes, peel -- cut 3/4" 1/4 teaspoon Dried thyme leaves 1/8 teaspoon Pepper 1 cup Light cream OR half and half Salt 6 slices Bacon, cooked -- crumbled 1 teaspoon Parsley -- garnish In Dutch oven, combine ham stock, potatoes, thyme, and pepper. Cover, bring to boil. Simmer, covered, 15 mins or until potatoes are tender. Remove from heat and let coo l slightly. In batches, puree mixture until completely smooth. Return puree to pot. Stir in cream. Taste soup and add salt as needed. Reheat soup, stirring. Do not boil. Stir in bacon,cook 2 mins. longer. Makes 5-6 servings - - - - - - - - - - - - - - - - - -
