* Exported from MasterCook * Cream of Red Pepper Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons Butter 2 cups Onion -- chopped 1 tablespoon Garlic -- crushed 1 teaspoon Salt Freshly ground black pepper 5 medium Red bell pepper -- roasted 1 tablespoon Flour 1/2 cup Stock or water (I use Chicken stock) 2 1/2 cups Milk at room temperature 1/2 teaspoon Cumin Saute' onion and garlic in the butter. Add salt, pepper and cumin. Add peppers, stir and cover and cook on low for 10-15 minutes, stirring intermittently. Gradually sprinkle in flour and cook, stirring, for an additional 5 minutes. Add stock, stir, cover and cook 2-3 minutes more. Remove from heat and let cool slightly, then puree with milk in batches (if necessary). Strain for a smoother texture.
