* Exported from MasterCook * Cream of Sweet Potato Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetarian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 medium sweet potatoes 2 cups vegetable broth pinch nutmeg pinch ground cloves 1 1/2 cups soy milk -- or 1% milk salt -- to taste Peel and slice sweet potatoes. Place potatoes in dutch oven with broth. Bring to a boil, cover and reduce heat. simmer until potatoes are tender, about 20 minutes. Place half of potatoe slices and half of broth in a blender/processor. add nutmeg, cloves, milk and salt. Puree. Repeat with remaining potatoes and broth.
