* Exported from MasterCook * Amerigo's Zuppa di Pesce Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 Scallions -- chop 1 large Onions -- chop 1 Carrot -- chop 1 Rib celery -- chop 4 tablespoons Olive oil Cod fish POACHING LIQUID 2 Carrots -- chop 1 large Onion -- chop 1 Sprig parsley -- chop 2 tablespoons Butter 2 tablespoons Oil 1 quart White wine 2 quarts Water 2 Bay leaves 1/2 ounce Salt 8 Black peppercorns In a large saucepan saute scallions, onion, carrot and celery in olive oil till translucent and starting to brown--about 5 mins. Add cod and cover with enough poaching liquid (see below) to cover fish. Bring to a simmer and cook till fish has become cooked through, but not so it starts to break down. Remove to a serving dish and spoon the sauce over it. POACHING LIQUID- In a saucepan saute carrots, onion, parsley, celery in butter and olive oil till tender. Add wine, water, bay leaves and salt. Cover and let simmer for 45 minutes. 10 minutes before the end of the cooking time add peppercorns . Remove liquid from heat, let cool, then strain. You may also add 2 cups of vinegar instead of the wine for a more astringent taste. - - - - - - - - - - - - - - - - - -
