* Exported from MasterCook * Fresh Berry Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Eggs Fruit Soups Restaurant Celebrity Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 4 cups fresh strawberries -- raspberries blueberries or boysenberries 2 cups water 1/2 cup sugar 2 tbsp quick-cooking tapioca 8 oz fruit-flavored yogurt -- to match berries Wash & hull berries. Reserve a few for garnish. Place remaining berries in a food processer & process at medium speed until smooth. Transfer to a 2 quart microwavable bowl. Stir in water, sugar & tapioca. Microwave, high, uncovered, for 9 - 10 minutes or until mixture boils, stirring once. Cool slightly. Using a whisk, mix in yogurt until smooth. Cool. Cover & refrigerate until chilled.
