* Exported from MasterCook * Green Turtle Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 pound turtle meat 3 veal tails 1 large onion 1 large garlic clove 1 cup chopped celery tops 1 bay leaf 2 cloves -- pounded 2 allspice berries -- pounded 1 sprig thyme 2 turtle or hen eggs 1 lemon 1 glass white wine 3 quarts water black pepper red pepper salt minced parsley Put all, except the thyme, eggs, lemon, and wine, into three quarts of cold water; season with black pepper and salt and a very little red pepper, and simmer for seven or eight hours. Half an hour before serving, put in the sprig of thyme. If you have no turtle eggs, slice two hard boiled hen eggs and put into the soup before serving. When you take the soup from the fire add one glass of white wine. A thick slice of lemon and a flat teaspoon of mince d parsley on top of the lemon, is served with each plate. Be sure to press, with the bowl of a spoon, each slice of lemon, so it gives flavor. - - - - - - - - - - - - - - - - - - NOTES : To the epicure this soup is worth all the time it takes to make it.
