* Exported from MasterCook * Abe's (Calorie-Less) Gumbo Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 pounds Raw shrimp -- unpeeled 2 pounds Okra (fresh or frozen) -- slic 1 cup Bell pepper -- diced 1 cup Onion -- diced 1 cup Celery -- thinly sliced 2 Bay leaves 15 ounces Tomato sauce or whole tomato 1 tablespoon Worcestershire sauce 1 teaspoon Kitchen bouquet 1 pinch Thyme 1/4 teaspoon Garlic salt 1/2 teaspoon Pepper 1/2 teaspoon Tabasco sauce Boil shrimp in 2 1/2 quarts of unseasoned water. Remove shrimp and set aside saving at least 2 quarts shrimp stock. In shrimp stock add okra, bell peppers, onions and celery. Cook on medium to low heat for tw hours, stirring often to prevent sticking. Add rest of ingredients (except shrimp) and cook one hour more, stirring occasionally. At this point you should have at least 5 pints of very thick gumbo, with little or no calories, which can be served as is. The cooked shrimp can be peeled and added when reheating gumbo to serve. If you like oysters, put them in the gumbo the last thirty minutes of cooking (oysters and oyster water).
