* Exported from MasterCook * Waldine's File Gumbo Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Soups Chicken Meats Seafood Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 large Fryer -- cut up 4 tablespoons Cooking oil 4 tablespoons Flour 1 large Onion -- chop 1 bn Green onion -- chop 1 large Green bell pepper -- chop 2 Ribs celery w/leaves -- chop 1 can Rotel chiles/tomatoes 1 bn Parsley -- chop 1 Bay leaves 1 tablespoon Fresh thyme -- or 1 teaspoon Dried 10 milliliters Garlic -- mince 1 pound Smoked sausage or andouille 24 Oysters Salt and pepper 1 tablespoon File powder In a heavy saucepan, brown the chicken slowly in the oil. Remove the chicken and saute the onions, green onions, green pepper and celery until limp but not browned. Remove from pan. Stir the flour into the pan. Make a roux, stirring constantly. Replace the chicken and veggies, Rotel chiles/tomatoes and add water 3 to 4" above the chicken. Add the parsley, bay leaf, thyme and garlic. Simmer until chicken is tender. Add the sausage and cook an additional 10 minutes. Add oysters and liquid and simmer, until oysters curl. Remove from heat and add file powder Serve over white rice. This gets better with age.
