* Exported from MasterCook * Country Lentil Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large Onions -- chopped 3 Carrots -- grated 2 Shallots -- minced 30 milliliters Garlic -- minced 3 tablespoons Butter 1/4 cup Dry white wine 1 pound Can stewed tomatoes -- chop undrained 2 cans (10-1/2 oz ea) chicken broth 1 can Beef broth 6 slices Bacon; cook crisp, drain -- crumble 1 pound Pkg lentils; rinse -- drain Salt and pepper to taste In a Dutch oven casserole, saute together first 5 ingredients, until onions are transparent. Add the wine and simmer the mixture, until liquid is reduced by half. Add the remaining ingredients and simmer soup, with lid slightly ajar, for about 1 hour 15 minutes, or until lentils are very tender.
