* Exported from MasterCook * Curried Lentil Soup Recipe By : Serving Size : 5 Preparation Time :0:00 Categories : Soups/Stews Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 tablespoons extra virgin olive oil 4 medium carrots -- diced 2 large celery stalks -- diced 1 large onion -- chopped 1 medium granny Smith apple -- ed/diced 1 tablespoon ginger root -- grated & peeled 1 large garlic clove -- crushed 2 teaspoons curry powder 1/4 teaspoon ground cumin 1/4 teaspoon ground coriander 3 3/4 cups vegetable broth 16 ounces lentils, raw 1/4 cup chopped parsley -- or cilantro 1/2 teaspoon salt -- optional In a 5-quart Dutch oven or saucepot, heat olive oil over medium-high heat. Add carrots, celery, onion and apple; cook, stirring occasionally, 10-15 minutes until lightly browned. Add ginger, garlic, curry, cumin and coriander; cook, stirring 1 minute. Add vegetable broth, lentils and 5 cups water; heat to boiling over high heat. Reduce heat to low; cover and simmer 45-55 minutes until lentils are tender, stirring occasionally. Stir in parsley and salt.
