* Exported from MasterCook * Favorite Oxtail Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Meats Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 cup Oil 5 pounds Oxtails -- precut to 1-2" 2 large Onions -- chpd 2 large Garlic cloves -- minced 2 large Bay leaves 1/4 cup Pearl barley 10 cups Water 1 pound Round steak -- cut 1/2" cubes 2 Carrots, med -- thin sliced 2 large Celery ribs -- thin sliced 1 Leek -- white part and 1" of chpd 2 Turnips,med, peel -- dice 2 Parsnips, med, peel -- dice 2 large Potatoes -- cut 3/4" cubes 1/2 cup Parsley -- minced 1 teaspoon Dried thyme leaves 1 teaspoon Dried marjoram leaves 3/4 teaspoon Chili powder 1/8 teaspoon Cayenne pepper 1/2 teaspoon Pepper Salt to taste In lg pot, heat oil and brown 1/2 of the oxtails. Remove oxtails and place in lg bowl . Repeat with remaining half. Scrape browned bits. Add onion, garlic to pot and cook 5 mins. Return oxtails to pot. Add bay leaves, barley, water, and meat. Bring to boil. Simmer 1 hr, 45 mins. Add remaining ingreds and simmer 50-60 mins. Skim fat. Remove bay leaves. Remove oxtails and reserve them. When they are cool enough to handle, cut the lean meat into bite sized pieces and return to pot. Heat for additional 2-3 mins. This soup is wonderful reheated, but it tends to thicken on standing.
