* Exported from MasterCook * Joni's Beef Barley Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Beef Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1 tablespoon Vegatable oil 1 medium Onion -- chopped coarsely 1/2 cup Carrots -- chopped 1/2 cup Celery -- chopped 3 Cloves garlic -- crushed 2 pounds Beef -- bonless chuck in one inch pieces 5 cups -water 1 1/2 teaspoons Salt 1 1/2 teaspoons Thyme -- dried leaves crushed 1 Bay leaf 1/2 teaspoon Black pepper 1/3 cup Barley -- medium 1 package 9oz's frozen french-cut -- green beans Heat oil in Dutch oven over medium heat until hot. Add onion,carrot,celery and garlic ; cook 5 minutes or until tender. stirring frequently. Add Chuck pieces,water,salt,thyme ,bay leaf and pepper. Bring to a boil. Reduce heat to low; cover tightly and cook slowly 1 hour. Add Barley and continue to cook 50 to 60 minutes more, or until beef and barley are tender . Add green beans; return to a boil. Reduce heat; simmer 2 to 3 minutes longer or until green beans are tender and heated through. Remove bay leaf. Serve piping hot with Crusty Bread and Butter. - - - - - - - - - - - - - - - - - -
