* Exported from MasterCook * Mediterranean Meatball Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Italian Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- -----MEATBALLS----- 1/2 cup Onion -- chopped 1 tablespoon Olive oil 1/2 cup Italian bread crumbs 1/4 cup Milk 1/4 teaspoon Salt 1/2 pound Ground beef 1/4 teaspoon Fennel seeds -- crushed -----SOUPS----- 2 cups Leeks; washed -- sliced 1 cup Raw potatoes -- cubed 1 can Beef bouillon (10 1/2 oz) 2 Carrots -- sliced 1/2 cup Elbow macaroni 1 cup Celery -- sliced 2 1/2 cups Italian plum tomatoes 1/2 cup Celery leaves -- snipped 1 Garlic cloves -- crushed 1 Parsnip -- cut into juilenne strips Fresh parsley or chives -- chopped Parmesan -- Romano or Fontina grated -- for garnish Meatballs: Saute onions in skillet with olive oil. Soak bread crumbs in milk; add salt and mix all ingredients. Form into 12 balls; cool in refrigerator for 30 minutes. Combine all soup ingredients (except garnish) in large pot; cover. Simmer for 30 minutes; increase heat to boiling. Drop meatballs into boiling soup. Cover; reduce heat and simmer 12 minutes. Serve soupe topped with chopped fresh parsley or chives, grated Parmesan, Romano or Fontina cheese. Serves 6. - - - - - - - - - - - - - - - - - -
