Cut meat off bones and cut meat into 1 1/2-inch pieces; place meat and meat bone in saucepan. Add water, salt parsley, pepper and celery; cook gently 2 hours, or until meat is tender. Meanwhile, peel and dice potatoes, scrape carrots and cut in 1/2-inch pieces, and peel and thinly slice onions. Add vegetables to soup; continue to cook 1 hour longer, or until vegetables are tender.
