* Exported from MasterCook * Seven Oaks Mushroom Soup Recipe By : Serving Size : 1 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/4 Cup olive oil 1 Cup onions - diced 1 Cup celery - diced 3/4 Pound fresh white mushrooms -- cut in -- 1 1/2 quarts half and half 1 1/2 quarts chicken broth Salt, pepper 2 tablespoons chopped parsley Heat oil in deep saucepan. Add onions and celery. Saute until tender. Add mushrooms and saute over low heat 4 minutes. Add half and halfand chicken broth. Reduce soup by 1/2 or until creamy.
