* Exported from MasterCook * Brandied Onion Soup Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 c Onions -- slice thin 1/2 Stick butter 1 t Creole mustard 2 ts Flour 1/2 ts White pepper 6 c Beef broth 1 c Water 1/3 c Brandy 4 sl French bread -- sl thick 2/3 c Monterey Jack -- shred 2 tb Roquefort -- crumble 2 tb Parmesan -- grate Saute the onion in butter and mustard until soft. Add flour and white pepper, broth and water. Warm to just below a simmer and allow to cook for 10-12 minutes. Add brandy, then heat for 1 minute more. Do not let the soup boil. Ladle soup into crocks and top each with a round of French bread. Top the bread with a mixture of the cheese. Put crocks under a hot broiler until cheese is melted and slightly browned.
