* Exported from MasterCook * Classic French Onion Soup Recipe By : Serving Size : 4 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 large Yellow onions -- slice thin 3 tablespoons Peanut oil 1 cup Dry white wine 3 cans Beef or chicken broth 1/2 teaspoon Salt 1/4 teaspoon White pepper 1 Bouquet Garni* 1 Loaf French bread; 1" sl -- toast 3 min per side 4 ounces Gruyere cheese -- grate Fresh thyme for garnish *Bouquet Garni-Tie together 3 sprigs parsley, 2 sprigs thyme and 1/2 bay leaft with string or enclose herbs in square of cheesecloth secured with string . Heat oil in Dutch oven. Add onions; cook and stir 15 minutes or until lightly browned. Reduce heat to medium; cook, stirring occasionally, 30 to 45 minutes until onions are deep golden brown. Add wine; cook over high heat 3 to 5 minutes or until liquid is reduced by healf. Add broth, salt, pepper and bouquet garni; bring to a boil. Reduce heat to low. Simmer 25 to 20 minutes; remove bouquet garni and discard. Ladle soup into 4 heatproof bowls; top with bread and cheese. Broil, 4" from heat, 2 to 3 minutes or until cheese is bubbly and browned.
