* Exported from MasterCook * Francois' Onion Soup Au Gratin Recipe By : Serving Size : 6 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup Oil 3 large Onions -- slice thin 1 tablespoon Flour 6 cups Beef stock 1 tablespoon Dry white wine 2 small Bay leaves 1 pinch Thyme 1 pinch Salt and pepper 6 slices French bread -- toast 6 tablespoons Swiss cheese -- shred Heat oil over medium-high heat in soup pot. Add onions and saute until browned . Add flour, mixing until smooth, and cook until flour is lightly browned, about 30 seconds . Add stock, wine, bay leaves, thyme, salt and pepper. Bring to boil and cook until onions are soft, about 20 minutes. Correct seasoning. Ladle soup into 1 large or 6 individual earthenware crocks. Top crock with bread slices and cover with cheese.
