* Exported from MasterCook * French Onion & Cabbage Soup Recipe By : Serving Size : 5 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 2 large Onions 1 small Head cabbage Olive or salad oil Salt 8 ounces Loaf French bread 1/2 teaspoon Thyme leaves 1/4 teaspoon Pepper 1/4 teaspoon Garlic powder 2 Extralarge vegetable -- bouillon cubes or 4 veg broth & season 1/2 pound Swiss cheese -- shredded Cut each onion lengthwise in half; cut each half crosswise into 14" slices. Cut cabbage into 1/4" slices; discard tough ribs. In 5 qt saucepot over medium heat in 2 Tbl oil cook onions, cabbage and 1 tsp salt 20 min or until tender and browned. Meanwhile preheat oven to 450. Cut bread into 1" chunks. Into jelly-roll pan, measure 2 Tbl oil; add bread chunks to pan and sprinkle with thyme, pepper, garlic powder and 1/4 tsp salt. With rubber spatula gently toss bread to coat evenly. Bake 10 min or until lightly toasted, stirring once halfway through baking. Turn oven control to broil. Into cabbage mixture stir bouillon cubes and 7 cups water; over high heat, heat to boiling. Arrange 5 large (16 oz) oven-safe soup bowls in jelly-roll pan; ladle soup into bowls. Top with toasted bread chunks, then shredded cheese. Place pan in oven rack about 5-7" from source of heat; broil 3 min or until cheese is melted and browned. - - - - - - - - - - - - - - - - - -
