* Exported from MasterCook * Green Onion Soup Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Vegetables Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 12 Green onions with tops 3 Med potatoes; peeled -- sliced 4 cups Chicken broth 10 3/4 ounces Cream of celery soup 3/4 cup Evaporated milk 1 tablespoon Butter 1/2 teaspoon Salt 1/4 teaspoon White pepper Green onion strips -- garnish Combine onions, thinly sliced potatoes and chicken broth in large saucepan; cover and cook 10 min. or until vegetables are tender. Strain well, reserving liquid in saucepan. Combine vegetables, soup and evaporated milk in blender; process until smooth. Add to reserved liquid. Stir in butter, salt and pepper; cook over low heat, stirring often, until thoroughly heated. Serve hot or cold. Garnish with green onion strips. Makes 7 1/2 cups. - - - - - - - - - - - - - - - - - -
