* Exported from MasterCook * La Cuisine Soupe a L'oignon Gratinee (Onion) Recipe By : Serving Size : 8 Preparation Time :0:00 Categories : Soups Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 1/2 cup Peanut oil 6 large Brown onions -- coarse chpd 1 teaspoon Thyme 3 Bay leaves 1 Bottle dry red wine 10 cups Beef consomme 8 slices Stale French bread 1 1/2 pounds Swiss cheese -- grated La Cuisine Restaurant, Windsor, Ontario, Canada Heat oil in lg pot. Add onions and saute until cooked but not brown. Add thyme and bay leaves. Stir in wine. Bring to boil and let soup reduce for a few mins. Add consomme and cook uncovered, 20 mins. Pour soup into 8 lg ovenproof soup bowls. Top with slice of French bread. Sprinkle with cheese. Broil quickly until bubbling and golden. Serve at once. - - - - - - - - - - - - - - - - - -
